Kinnathappam is a traditional steamed sweet cake from the Kerala Muslim Cuisine. The ingredients vary from region to region. I love the one with gram dal and jaggery. Hope to come with that in another post, insha Allah.
Ingredients,
rice powder (roasted) 1 cup
coconut milk 3/4 cup to 1 cup
sugar 1/2 cup or as per taste
cardamoms 2 powdered
ghee 1tsp
How to prepare,
Mix coconut milk with rice powder.
Mix to make a batter (like dosa batter) without lumps.
Add more milk if needed.
Add sugar, cardamom powder, ghee and mix well.
Grease a steel plate with ghee, pour the mixture.
Pour as per the thickness you needed.
Cook in the steam using the idli vessel or pressure cooker.
Close the lid while cooking.
Don't put weight while cooking in the pressure cooker.
Open the lid after ten minutes and check the appam is cooked.
If the appam is not soggy but firm, then it will be cooked.
Switch off fire.
Allow to cool, cut in to pieces.
Serve with tea.
