Caviar omelets

Caviar / fish eggs are known as parinjeen or pananjil in our place. (Don't know how it is known in other places of Kerala.) This is a very simple dish which we would make just as we prepare our usual omelets.



Ingredients
Fish eggs / caviar 1 cup
onion 1
tomato 1
pepper powder 1 tsp
green chillies 2
curry leaves few
turmeric powder 1/2 tsp
eggs 2
salt
oil



Method
Wash and cook caviar with salt , turmeric powder and enough water. Remove outer skin (if it has) and mash it.Chop all the vegetables. Break eggs into a bowl. Add the chopped vegetables, pepper powder and salt. Mix together , just like for making omlettes.Heat a pan, spread little oil make and omelettes. Make small omelettes. Otherwise it will break.

  2. I love this....just had this for lunch..but I'v never had it as an omelette...we add it to the fish curry along with fish pieces...

  3. In US, Russian Caviar is very expensive and served in 5 star restaurants. I didn't know you get it easily n India too.Looks great Seena, never tasted it though!:)

  6. Back at home my mom made this. Now of us kids ate it except of her. She just adore fish eggs.

    Nice recipe. I think it will taste more good if we add grated coconut and replace shallots with onion. Just a suggestion. Good work seena. Keep going.

  18. Not caviar, fish roe. Big difference between caviar which is processed and salted (and from sturgeon) and raw fish roe. You want to use raw fish roe for these.
