Kerala Chicken Biryani

This is the usual method of making biriyani in muslim homes of Thrissur.Mom makes biriyani using other methods like adding coconut milk or blended coconut. I will come with that recipes later Insha Allah.



Ingredients to make Chicken Biriyani

Basmati rice - 2 1/2 cups
Chicken- 1/2 kg
Onion(medium) - 6 nos(chopped finely)
Tomato(medium) - 3 nos(chopped finely)
Garlic - 7 big cloves
Ginger - 1 and 1/2 inch piece
Green chilly - 2
Garam masala powder - 1 tbsp
Yogurt - 4 tbsp
Coriander leaves - 1 cup
Mint leaves(Pudhina) - 1/4 cup
Ghee - 1/2 cup
Lime juice - 4 tsp
Chilly powder - 1 tsp or
Pepper powder - according to taste
Turmeric powder - 1/4 tsp
Cardamom(Elakka) - 2 nos
Cinnamon(Karugapatta) - 3 small pieces
Cloves(Grambu) - 2 nos.
Salt



How to prepare

1)Grind garlic,ginger and green chilly together to make paste.
2)Heat ghee in a pan.
3)Saute onions till golden brown.
4)Add garlic-ginger-green chilly paste and fry for 2 mins.
5)Add chopped tomatoes, chilly powder, turmeric powder, garam masala powder, mint leaves ,salt and coriander leaves into it.
6)Saute for a few minutes till the masala becomes thick.
7)Add cut and cleaned chicken pieces and stir.
8)Pour little water [if required] and mix.
9)Cook till chicken is done.
10)Add yoghurt.



For rice

11)Boil water in another vessel.
12)Add enough salt, a pinch of turmeric powder, cardamoms, cinnamon, cloves and 1 spoon ghee into this.
13)Cook rice until it is done and drain. :- Take care the rice not to be sticky.
14)Heat a vessel.
15)Pour a little of ghee.
16)Put a little of cooked rice and spread 1 tsp of lime juice over it.
17)Place one layer of the chicken masala above it and repeat the process till the rice and masala are over.
18)Close the lid tightly and heat on a low flame for about 10 mins.
19)Mix before serve.:- Serve with yoghurt and cocunut-pudhina chutney and pickle.

  2. Seena, I shouldn't have come here at this hour. It is dinner time here and three delicious dishes!!!!! That aatirachi is so good. I am definitely going to try this one. Avial with shallots!! never tried. Must taste really good as shallots do add flavor to any curry. btw what is the medicinal value you mentioned?

    I am going to try the biryani today and let you know. It really looks delicious.Biryani has kept me far for sometime now.i am apprehensive of using curd and heating it! Still today im going to try.
    Your blog has a regular visitor, my sis. She just keeps her laptop in kitchen and cook what u have here and tells me that i prepared this and that from your blog... I am very thankfull seena. Lats yr i tried the chicken curry and fry and u saved me. Now i cook better and so will visit you regularly.

    I must thank you for the delicious recipe of this chicken biryani.. i made this biryani for my husband's birthday and it was the first time in my life that i was attempting to cook biryani..i have always been a little afraid to try and make biryani as i was scared it wont come out well and the whole quantity of food will be a waste..
    But i decided to try for my husband's birthday and he lovvveddd it.. i was so happy and i cant thank you enough..
    He tell everyone now that im an expert biryani cook.

Assalamu Alaikum..i'm a first timer to ur blog..it was recommended by my cousin..gosh its superb...i too make chicken biriyani the same way.the only difference is that i make ghee rice(with little ghee) instead of just cooking and draining the rice.anyways really enjoyed a tour through ur site.

I love the way you have organised the site.I am a very bad cook indeed, but after visiting your site i feel like i have improved my stds of cooking.I have tried many of your recipes and they have come out very well.This encourages me to try new and invite people for food.
    I do have a question about the quantity of rice that i need to take for chicken biryani.The recipe is written for 2 1/2 cups of rice. For how many people roughly does the biryani made of 2 1/2 cups rice be enough for?Is there any ratio b/w the number of onions/rice/chicken pieces/no of people?If you could pls let me know, it will be fantastic.As you know, i am very poor with these calculations and measures.Thank you for your time.'am looking forward for your reply.     About making biriyani, this 2 1/2 cups will be enough for 2 or 3 persons.,. Appor. 5 1/2 cups will be equal to 1 kg, so we normally take 1 kg or 1 1/2 kg of meat for 1 kg rice. You can reduce the amount of onion, and use some other method like making kuruma,(refer beef biryani). And one kg rice will be equal to about 6 people, I think..
    Ok, Simi, try making little amount for the first time, later you can increase. We all learnt like that..

    We have normally seen people putting fire on top of the vessel also after proper sealing of the vessel lid. Seeing all these complications we tend to shy away from trying our luck on byriani. But your recipie seems to be very simple and straight forward. Will give a try. Thanks and best wishes,

    everything ended out to be a disaster. my husband has strictly asked me not to try biriyani ever.

  31. I just made chicken biryani-friend's mom's recipe. Unfortunately I did not have saffron, needless to say it was yummy. I had lamb biryani at a restaurant sometime agao and it was a colossal waste of money and time. Where is the meat was the question posed by my son. It tasted OK, nothing mind blowing, but to have two huge bones with out meat, sad indeed. I have to make lamb biryani now that I have finally conquered my fear of making biryani. My family will be ecstatic.

    Thanks for the great recipe. It looks yummmmmmmy. I can't wait to try it. I have few doubts. Could you pls tell me how much weight in grams exactly is 1 cup of rice. I am a person who needs proper measurements for cooking.When you say 2 1/2 cups of rice,what cup do you use? Is it the normal tea cup(small one) or is it the marked cups you get it in supermarkets? But i think its quite vague .I have tried making biriyani so many times. i do not have a proper measurement and its different everytime when I make it. All of my friends are excellent biriyani makers. If i ask them the recipes they never give me the right measurements. I feel it very difficult to cook. Do you know what I mean? I do not have the skills of improvisations as well. Can we fry the pieces and make biriyani ? I know it would not be very healthy.

  38. Smitha, thanks for the nice words.I wouldn't use measurements in gms but use the normal tea cups and teaspoons and Tbspoons. I think 1 cup will be approximately 195 gms.Any way use the normal tea cup to measure. First you start making biryani without frying meat, that would be easy for you.All the best and hope to see you back with a good result.. :)

    How are you? I made my first chicken Biriyani using your recipe. It came out really very good. My husband was saying it tasted almost like the biriyani his GrandMom used to make.
    I made it in a little different way. Instead of doing dum on stove top, I preheated the oven at 310F and baked for 10 minutes.

    i am new to your blog,tried your pathiri n chicken curry,it came out good. I ws tried many times to make biriyani but all time it was a flop.I want to try this method and have a doubt.In the chicken preparation you mentioned as "10.add yogert". Can u pls expalin.I hv to add the yogert in chicken after swich off the flame or hv to cook the chicken with yogert for some time? pls help..
